Brae grows organic food for their restaurant. Every day the highest quality ingredients are carefully selected from their own harvest, from local farms and ethical sustainable producers.
Up to 90% of the vegetables, fruit, citrus, nuts, berries, grain crops, olives, honey and Australian edible plants, all served in the restaurant the same day they've been picked, are produced organically at Brae Farm, without the harmful chemical, transport or fossil fuel inputs of the industrial food system.
Bread is grown, harvested, milled and baked on site by their team. Olives from the farm are pressed for olive oil and a wheat beer is brewed each year, using organic wheat grown on site.
Brae's guest accommodation......since 2016, private, exclusive and organic
Brae’s guest accommodation is carbon neutral.
They've added six guest suites, in 2016, using passive solar design principles, which include recycled materials, solar power, double glazed windows, harvested rainwater and a worm farm biological waste treatment system, resulting in a complete building with zero net emissions.
Each suite accommodates two adults in a king size bed sleeping in ecoLinen organic cotton sheets with an overhead star-gazing skylight.
A cocktail bar, record collection with turntable and views of the rolling hills of The Otways complete the beautifully curated experience. If you're passionate about exquisite food and some of the world's best wines, then staying the night is a no brainer!
